Strawberry Rhubarb Shrub

We traditionally camp with a group of friends over the long Holiday weekend. After setting up our campsite, we greeted our dear friends, welcomed the family who was joining us for the first time, and mixed a Strawberry Rhubarb Shrub cocktail for the adults to enjoy before dinner.

The American version of this sweetened vinegar based syrup has its beginnings in the 17th Century and it would appear that it is enjoying a resurgence in popularity.

I started the process at home, chopping and stirring in the sugar before packing up the car with tent, folding chairs, sun hat, ice chest and children.

I then mixed the balsamic vinegar in once we were settled at the camp site and it was time to serve the drinks.

The adults were offered a shot of gin or vodka to mix with the shrub and club soda, but it could easily be left out of this interesting and refreshing drink.

I enjoy being adventurous and trying different cocktails, and this sweet, tart one is definitely one I would make again.

Strawberry Rhubarb Shrub

Ingredients:

  • 1/2 cup strawberries, cut into quarters
  • 1/2 cup rhubarb, sliced
  • 1 cup of sugar
  • 1/2 to 1 cup of balsamic vinegar
  • gin or vodka
  • club soda

Instructions:

  1. Mix the strawberries, rhubarb and sugar in a container. Cover and leave in refrigerator overnight.
  2. Drain the fruit from the mixture, discard. Stir the vinegar into the sugar mixture.
  3. To serve, place 2 ounces of the shrub, 2 ounces of gin or vodka if desired and top with club soda.
