Do you ever get tired of the same old boring side salad? Or, when you are asked to bring a side dish to the company potluck or Christmas party you feel yourself panicking? Well, panic no more because help is on the way in the form of this pea and cauliflower salad.
You know how delicious potato and chicken salad is, right? Well, using cauliflower as the base is essentially creating the same familiar dish. Add all the expected ingredients and then wow it up with white wine vinegar, peas, and cheddar cheese. Each bite bursts with flavor and will make you wonder why all of a sudden you have a new addiction. Goodbye chocolate. You’re so yesterday.
Ingredients (serves 4)
1/2 head of fresh cauliflower, cut into bite sized florets - 16oz of frozen peas, thawed - 1/4 red onion, minced - 1 cup chopped celery - 3 tablespoon mayonnaise - 2 teaspoons De Nigris White Wine Vinegar Organic - 1 teaspoon salt - 1/2 teaspoon black pepper - 1 dill pickle, chopped - 1 cup of cheddar cheese cut into bite size
Directions
- Steam cauliflower on stove until al dente (firm).
- Add cauliflower to mixing bowl and mix with remaining ingredients.
- Serve and enjoy!
