When life gives you spinach, you make flatbread.
On Sunday, one of my beautiful nieces married her prince charming and I was in charge of the behind-the-scenes food prep. A local restaurant that specializes in wood-oven flatbreads provided the main focus and I was to come up with a complimentary salad. I chose a spinach salad with blue cheese, walnuts, and dried cranberries, because I knew that it is always a crowd pleaser.
After the I-dos and I-wills were over and the happy couple jetted away, I was left with a bounty of spinach. After divvying it up among family members and coming home to wilt them on top of beans and rice for dinner that evening, I kept thinking back to how delicious the flatbread and spinach salad were together. And then my thoughts raced to reminisce over the flatbreads that were served. I had it! I needed to create my own flatbreads (albeit without the wood oven) and make spinach the star player. Yes!
This salad takes the best of those wedding dishes by incorporating garlic, sautéed caramelized onions with balsamic and wilted spinach. A quick few minutes on the grill and you are ready to serve.
Don’t have a grill handy? No problem. The oven will do nicely.
