A go-to marinade for chicken, turkey or beef is one of those kitchen essentials that I believe is easy to master. All it takes is a few base ingredients composed of a fat and vinegar and the rest is about personal preferences for a signature touch.
Let us talk fats first. Oils make for excellent marinades because they stay liquid when stored in the refrigerator and ingredients can easily be whisked together. Pick one that can take you from cold to high heat such as olive oil or unflavored coconut oil.
Now, let us talk vinegar. Vinegars added to the oil gives balance to the marinade. It also adds flavor and if you stopped right here with just these two ingredients, you have all you need to season and tenderize your meats or vegetables. In this recipe we have recommended De Nigris Organic Apple Cider Vinegar since it adds a kiss of apple flavor to the vinegar. Of course, feel free to use De Nigris white wine vinegar or De Nigris red wine vinegar. All will work quite nicely.
But of course there IS one more thing to talk about… adding personal preferences for a signature touch. This marinade recipe has suggestions to add spices such as garlic, onion power, cumin, paprika, pepper flakes and two types of mustard. If you have a favorite spice or seasoning, now is the time to substitute and have fun in the kitchen.
Mix and combine with your favorite meat, poultry or vegetables and let marinade in a bag in the refrigerator for one to 24 hours. Prepare by grilling, baking, sautéing, slow cooking or pressure cooking as you desire.
SWEET & TANGY APPLE CIDER VINEGAR MARINADE
1 tablespoon De Nigris organic apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon stone ground mustard
1 tablespoon mayonnaise
¼ cup extra-virgin olive oil
¼ teaspoon sea salt
1/8th teaspoon ground black pepper
3 garlic cloves, minced
1/4th teaspoon onion powder
1 tablespoon agave
1/8th teaspoon cumin
1/8th teaspoon paprika
pinch chili pepper flakes
- Mix ingredients and place in storage bag along with poultry or meat and marinade in refrigerator for one to 24 hours. Grill or bake as desired.
