Serving an unexpected twist to a salad is one of my favorite things to do. While I appreciate a good old-fashioned spring salad, a salad that mixes both sweet and savory will knock it out of the ballpark. Every time.
This melon salad mixes the sweet note of cantaloupe with layers of savory with spinach, feta cheese, and turkey pastrami. A super quick mix of olive oil and De Nigris Organic White Modena Vinegar with Balsamic Vinegar of Modena is the perfect combination to bring out the best flavors and have guests asking for seconds.
This salad is quite versatile and would be perfect on its own, as a potluck dish, or nestled next to grilled chicken.
SAVORY CANTALOUPE MELON SALAD
1 tablespoon extra-virgin olive oil
2 teaspoons De Nigris Organic White Modena Vinegar with Balsamic Vinegar of Modena
¼ teaspoon sea salt
1/8th teaspoon ground white pepper
1 large cantaloupe melon
6 spinach leaves, thinly sliced
2 mint leaves, thinly sliced
1 slice turkey pastrami, thinly sliced
2 tablespoons feta cheese
- In a small bowl, mix olive oil, De Nigris Organic White Modena Vinegar with Balsamic Vinegar of Modena, salt and pepper.
- In a large bowl, scoop melon into balls using a melon baller scoop. Add remaining ingredients and toss.
- Drizzle with olive oil mixture and toss thoroughly
- Serve and enjoy!
