Balsamic Peach Pizza
1 12 inch pre-made pizza crust
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon dried basil
salt and black pepper
1/2 cup ricotta cheese
1 to 2 fresh peaches, pits removed and thinly sliced
8 ounce fresh mozzarella, diced into small cubes
De Nigris Balsamic Vinegar Glaze, drizzled
1/4 cup fresh basil leaves, chopped
Preheat oven to 425 degrees. Place pizza crust on pizza stone. In a small bowl, mix olive oil, garlic, crushed red pepper, and basil. Brush mixture over the whole pizza crust. Add salt and black pepper. Dollop with ricotta cheese and sprinkle mozzarella cheese evenly over pizza crust. Top with peach slices. Bake for 15 minutes on middle oven rack. Turn oven to high broil and watch closely. Remove pizza when the cheese is bubbly and golden brown. Drizzle De Nigris Balsamic Glaze over pizza and sprinkle with basil. Serve immediately.
