Caprese Balsamic Grilled Chicken
1/4 cup De Nigris Balsamic Vinegar
1/4 cup extra virgin olive oil
1 tablespoon honey
1 clove garlic, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
4 boneless skinless chicken breasts
8 ounce fresh mozzarella ball, sliced
1 tomato sliced fresh basil, chopped
Directions Mix all marinade ingredients in a large zip top bag. Add chicken and marinate over night or at least 4 hours. Heat grill to medium high. Remove chicken from marinade and pat dry. Grill chicken for 4 to 6 minutes on each side. Top with mozzarella slice and continue to cook until cheese is melted, and chicken is done. Use a meat thermometer to determine doneness of 165 degrees. Serve topped with fresh tomato and basil.
