Tomato Salad with Fresh Caciotta Cheese

This simple summertime salad sums up la dolce vita.

Tomato Salad with Fresh Caciotta Cheese           

Ingredients
3 cups fresh tomatoes – variety of your choice
Fresh basil
Fresh mint leaves
Fresh oregano
salt and pepper
extra virgin olive oil
1 cup fresh caciotta cheese
2 cups mixed greens
De Nigris Bronze Eagle Balsamic Vinegar of Modena

Instructions

  1. Clean and rinse the tomatoes, dry them with paper towels and cut them in half and into wedges.
  2. Put them in the fridge to marinate with the ingredients listed for 20 minutes.
  3. Coat the dish with the herb emulsion, arrange the chopped tomatoes on top and garnish with a very fine grated fresh caciottina, the aromatic salad and the mint tops.


Tip! Make it a meal: top with grilled chicken or tuna for a protein-packed lunch
