Oh, how I love watermelon season! There’s just something that brings back memories of summers gone by and the promise of new summer memories when cutting into a cold watermelon on a hot summer day, taking that first sweet, juicy bite. So very refreshing and satisfying!
I buy a watermelon weekly at the farmer’s market throughout the season because I know that once cut, it will get eaten. Watermelon just does not go to waste at our house. I often serve slices as a side with our meals, especially at our neighborhood cookouts. It compliments the salty heat of the meat so well. Then there are times I feel fancy and make this watermelon feta salad with fresh mint and our De Nigris Balsamic glazé.
This watermelon feta salad with mint and a balsamic glaze is so light and refreshing. It’s the perfect side dish to take to a summer get-together!
Watermelon Feta Salad with Balsamic Glaze
1/2 seedless watermelon cut into 1 inch cubes
1/2 cup pickled red onion, diced
3/4 cup feta cheese, crumbled
1 tablespoon basil, chopped
1 tablespoon mint, chopped
2 tablespoons De Nigris Organic Balsamic Glaze, plus more for garnish
Reserve a pinch of basil, mint, feta, and sliced pickled red onion to garnish top of salad.
Directions Mix watermelon, pickled red onion, feta cheese, basil, mint, and De Nigris Organic Balsamic Glaze in a large bowl until well combined. Pour salad into a serving dish. Garnish with reserved ingredients. Drizzle balsamic glaze on top of salad. When serving, add a drizzle of Balsamic glaze around the plate.
