Zucchini Caprese Salad

You’ve got to hand it to the Italians -- they really know how to make the simplest of foods taste spectacular by adding just the right ingredients. Olive oil, balsamic vinegar and salt. These are the trifecta of perfect ingredients. For instance, consider the classic Caprese salad. Harvest fresh tomatoes, hand sliced mozzarella cheese, a spring or two of basic and the trifecta: olive oil, balsamic vinegar and salt. Perfection.


If you haven’t experimented with vegetable spiralizer gadgets yet, they are worth your while. If you have access to specialty stores or large chains such as Fresh Market or Whole Foods, these stores often stock pre-made spiralized zucchini. It has the appearance of spaghetti noodles, but instead of spaghetti, they are made one-hundred percent out of raw vegetables. Sautéed with butter they are fabulous. Left raw and made into a Zucchini Caprese salad? Downright perfection.




1 medium zucchini, spaghetti cut with spiralizer (or purchased pre-made spiralized)
1 cup cherry tomatoes, halved
4 ounces mozzarella, roughly chopped
½ teaspoon sea salt
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar


  • Toss zucchini, cherry tomatoes, mozzarella balls and salt together in medium bowl.
  • Drizzle with olive oil and De Nigris Balsamic Vinegar of Modena 35% grape must and serve.
  • Serve and enjoy!
