There is only one Balsamic Vinegar of Modena, but there are various qualities. We present our vinegar in a range of selected qualities, all guaranteed by the IGP certification, which requires full adherence to traditional methods and the highest standards of quality.
Cooked grape must is the main ingredient of our Balsamic Vinegar of Modena PGI. The concentrated grape must comes from the 7 vineyards of Emilia: Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana, Montuni , after the pressing and cooking of the grapes, the concentrated grape must ages in antique wooden casks for a minimum of 1 year. Only after these stages the Balsamic Vinegar has its typical dark brown color and its intense and rich flavor.
The percentage of grape must gives a different taste to the product: the more is the grape must the more intensive is the flavor, the better is the product.
