It’s simple! There is essentially only one golden rule to selecting the perfect balsamic. Choose the one that helps to create the perfect balance between your ingredients and enhances rather than overwhelms the individual flavours.
As a simple rule of thumb, we have developed a straightforward guide, to help you widen your balsamic repertoire and select the perfect partner for your favourite foods. It is based on the amount of grape must (the cooked flesh and skins of the grapes) that is present in each type of De Nigris Balsamic Vinegar of Modena. We call this the ‘density’.
De Nigris Bold and Fruity has a lighter density of grape must (35%), with a fruity, woody, and subtly acidic taste profile, making it ideal to enhance cold dishes like salad caprese, marinated chicken legs or grilled vegetables.
De Nigris Round and Velvety is medium density (45%) and has an intensity of rich flavour that makes it perfect for hot dishes, such as baked cheese, pork, lamb, fish, or elevating a simple tomato sauce.
De Nigris Rich and Dense has a high density (65%) of grape must, giving it the rich and sweet intensity to add a luxurious flourish to gourmet dishes, from risotto to ice cream.
